Banana Bread
A one-bowl banana bread with optional walnuts or chocolate chips.

What you’ll need
- 3–4 ripe bananas, about 2 cups mashed
- 1/3 cup salted butter, melted
- 3/4 cup (150 g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 1/2 cups (212 g) all-purpose flour
- 1 cup chopped walnuts or chocolate chips (optional), plus extra for the top if desired

How it comes together
Heat the oven to 350°F. Grease and flour an 8.5 x 4.5 inch loaf pan, or spray it with baking spray.
In a large bowl, stir the mashed bananas and melted butter together. Add the sugar, egg, and vanilla. Stir with a wooden spoon until combined.
Sprinkle on the baking soda, baking powder, cinnamon, and salt. Stir to combine.
Add the flour, and the walnuts or chocolate chips if you are using them. Stir just until no flour streaks remain. Pour into the pan.
Bake 50–60 minutes, until a knife in the center comes out clean. Cool in the pan 10 minutes, then turn out onto a rack and cool completely. Cut into 10 slices.

Bake for 50–60 minutes; 55 minutes is typical. The 65-minute total is the source's prep-and-bake estimate and excludes cooling time. Makes one loaf, cut into 10 slices.
If you only have unsalted butter, add another 1/4 teaspoon salt.
An 8 x 4 inch loaf pan also works. Expect the bake time to shift a little if the pan is a different size.
Muffins: fill a muffin tin and bake 20–24 minutes, until a toothpick in the center comes out clean.
Keeps a few days in an airtight container on the counter. The fridge buys another day or two. It starts tasting stale after about 5 days.
